Asian-Inspired Pasta Salad with Seared Tofu, Sesame Dressing, and Stir-Fried Vegetables

Ingredients
  

  • 2 cups cooked and cooled pasta such as soba noodles or linguine
  • 1 cup seared tofu sliced
  • 1 cup stir-fried vegetables such as bell peppers, snap peas, and carrots
  • 1/4 cup chopped scallions
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sesame dressing
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil

Instructions
 

  • In a large bowl, combine the cooked pasta, seared tofu, stir-fried vegetables, scallions, and cilantro.
  • In a separate small bowl, whisk together the sesame dressing, soy sauce, rice vinegar, honey, and sesame oil to make the dressing.
  • Pour the dressing over the pasta salad and toss gently to coat.
  • Refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld together.
  • Serve chilled and enjoy the Asian-inspired fusion of flavors!
