Italian Antipasto Pasta Salad with Salami, Mozzarella, Roasted Vegetables, and Balsamic Dressing

Ingredients
  

  • 2 cups cooked and cooled pasta such as rotini or penne
  • 1 cup sliced salami
  • 1 cup diced fresh mozzarella cheese
  • 1 cup roasted vegetables such as bell peppers, zucchini, and eggplant
  • 1/4 cup sliced black olives
  • 1/4 cup sliced red onions
  • 1/4 cup chopped fresh basil
  • 1/4 cup balsamic dressing
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine the cooked pasta, salami, mozzarella cheese, roasted vegetables, black olives, red onions, and basil.
  • Drizzle the balsamic dressing over the salad and toss gently to coat.
  • Season with salt and pepper to taste.
  • Refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld together.
  • Serve chilled and savor the Italian-inspired antipasto flavors!
