Mediterranean-Inspired Pasta Salad with Shrimp, Olives, Feta Cheese, and Lemon Dressing

Ingredients
  

  • 2 cups cooked and cooled pasta such as fusilli or farfalle
  • 1 cup cooked and peeled shrimp
  • 1/2 cup sliced Kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1/4 cup lemon juice
  • 2 tablespoons extra-virgin olive oil
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine the cooked pasta, shrimp, Kalamata olives, feta cheese, parsley, and dill.
  • In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
  • Pour the dressing over the pasta salad and toss gently to coat.
  • Allow the flavors to meld together by refrigerating the pasta salad for at least 30 minutes.
  • Serve chilled and enjoy the Mediterranean flavors!
